1. Ingredients:
– 1 cup millet (like pearl millet, finger millet, or barnyard millet)
– 1/4 cup urad dal (split black gram)
– 1/4 teaspoon fenugreek seeds (optional)
– Salt, as needed
– Water, for soaking and blending

2. Steps:
– Soaking: Wash millet, urad dal, and fenugreek (if using). Soak them separately for 6 hours or overnight.
– Grinding: Drain millet and urad dal, then blend them with water until smooth and pourable. Add salt and mix.
– Fermentation (optional): Let the batter sit in a warm place for 6-8 hours for a tangy taste and fluffiness.
– Cooking: Heat a non-stick pan, lightly oil it, and spread a ladle of batter into a thin circle. Cook it for 2-3 minutes until golden brown, flip, and cook the other side for 1 minute.

3. Serving:
– Serve hot with coconut chutney, sambar, or your favorite side dish.
